Burr Thanksgiving 2007
Had a fantastic weekend at the I. Tucker and Estelle Burr's! Here's the web album from Thanksgiving day.

Tofu Noodles! Friday, November 16, 2007 |

At Decker's suggestion/request, I'm back! And better than ever! I'll be branching out from med-school specific topics to a few of my other favorites: cooking, quilting (yes, i know, i'm a little young), sports and the occasional smattering of tech, politics and (yes) family :). Enjoy!
For today's tantalizing topic: House Foods Tofu Shirataki Noodles

I was first introduced to Shirataki Noodles in my mother's refrigerator. Never one to ignore a bag of moist noodles, i went in for a closer look:
Stats:
1 Bag = 40 calories, 1g fat, 30mg sodium, 6g carbs, 4g fiber, 0g, sugar, 2g protein...yes, that's right folks - 1 BAG.
Nutrition Info below - and they come in "fettuccine" or "noodle" shaped! Ask for them at your local supermarket. If I can get them in New Hampshire, you can get them anywhere!

Tonight's Dinner:
Veggie Tofu Stir-Fry - 2 hungry people, 3 less hungry people
1 Bag Shirataki TOFU Noodles (drained)
1/2 zucchini
1/2 lb green beans (topped and tailed)
1 small head broccoli
1 pkg thai-style baked tofu (by White Wave)
1 T oil
1-2 T soy sauce

spices (cumin, chili, thai curry paste, etc) - a little to add extra flavor!

1. chop up the veggies into "bite sized" pieces

2. heat the oil in a medium skillet and saute veggies for 3-4 min.

3. add soy and other spices and toss veggies

4. chop up tofu and add to veggies - toss!

5. drain noodles and add directly to skillet - toss again and coat noodles in soy/spice sauce.

6. Saute for 5 more minutes or until noodles are not chewy!

**note - you can par boil the noodles, which will make them a little softer**

Cheap, easy and healthy!
